    Roast Possum
    1 possum
    1 onion chopped
    1 tablespoon bacon drippings
    1 cup bread crumbs
    1 teaspoon red pepper flakes
    1 each egg chopped
    Directions
    Remove head and tail of possum (some people keep the head on).

    Soak in cold water to which is added 1 cup salt.

    Drain and rinse with boiling water.

    Stuff with possum stuffing, close the opening, and roast in black iron pot with a little water for 1-1/2 hours at 350 degrees F.

    Pineapple Casserole

    The recipe from Paula Deen is close enough.

    People are confused by it. It’s sweet and it’s fruit, so it’s a dessert? Wait, there’s cheese. I dunno.

    Small pumpkin, cut in half.
    Place each half, meat side down, in 2 oz of orange juice. Microwave for 12 mins.
    Peel skin off (careful… it’ll be hot)
    flip over (so each half is now bowl-shaped)
    Drizzle with honey or syrup
    Sprinkle a little (or a lot) brown sugar.

    Either eat as is, or slice it into small sections and ad a garnish.

    Bacon Knots
    Bacon
    Brown sugar

    Coat strips of bacon in brown sugar.
    Tie a knot in middle of each strip.
    Bake at 350 until edible.
    Experience unadulterated bliss.

    Okay, here’s a good one:

    Southwestern Shrimp & Corn Chowder

    ¼ cup onion, chopped
    1 clove garlic, chopped
    2 tsp. Chili powder
    1 jalapeno, seeded and chopped
    1 Tbsp. olive oil
    2 cans cream of potato soup
    4 oz. cream cheese, softened
    2 cups milk
    2 cups shrimp, cleaned and shelled
    1 cup corn
    ¼ cup cilantro (chopped if you want, but I don’t)

    1. In saucepan, cook onions with garlic, chili powder, jalapeno, and olive oil until tender.
    2. Blend soup, cream cheese, milk.
    3. Add shrimp and corn
    4. Bring to boil, stirring often.
    5. Reduce heat and cover. Simmer 10 minutes.
    6. Add water as needed to thin. Garnish with cilantro.

    Chicken pie

    4 large chicken breasts, cubed to just over 1/2″
    1 C. shredded cheddar
    1/2 C. salsa
    1/2 C. mayonnaise
    pre-made refrigerated pie shell

    Preheat oven to 450F
    Fry the chicken in a pan with salt and pepper season. While this is going, place lower pie shell in pie plate per instructions on box (like making a real pie!)
    Once cooked, combine chicken, shredded cheddar, salsa and mayo in a large bowl. Fold until well mixed. Pour out mix into pie crust. Spread evenly. Place top of pie shell on and crimp the edges (like making a pie!). Cook at 450 for 15 min until golden brown top.

    This recipe is bar-none awesome and easy to make. From my mother in law. Extremely tasty – possible to be a glutton on this. Leftovers are awesome as well.

Most wives would love for you to sit down with them and go through a couple of recipe books to give them some ideas of things you would like. So surprise your wife and ask her if you can spend an evening picking out some new recipes to try out!

    Curried Pork Chops with Apples and Onions

    4-6 thick-cut butterflied boneless pork chops
    2 Granny Smith apples, peeled, cored, and sliced into 1/4-inch rings or slices
    1 large or 2 small yellow onions, sliced into 1/4 inch rings
    2-3 heaping tbsp mild yellow or Madras curry (or red curry of you like something hotter!)
    1/4 tbsp cumin
    1 can PLAIN coconut milk–NOT THE SWEETENED KIND!– well-shaken to get the cream mixed in
    Salt and pepper to taste

    Place pork chops cut-side-up in bottom of a nonstick baking dish. Later apples and onions around and over chops. Sprinkle with salt and pepper. Mix curry and cumin with coconut milk, and pour over all. Bake at 350 degrees until meat is cooked through and sauce is thick. Onions and apples should be nice and soft by then! Serve over Jasmine or Basmati rice. Dee-lish!

    This is a light and healthy side dish. We tend to have this recipe with fish, especially tilapia. I make things easier by not cooking the basil.

    Fry leeks, bacon (snipped into pieces), and mushrooms in olive oil.

    Boil some pasta in another pot.

    Then add single cream and teaspoon of nutmeg to bacon mixture.

    When pasta is ready, drain and stir in to mixture.

    Voila

    Swiss Potatoes

    I package simply potato shredded hashbrowns
    1 package swiss cheese
    1 pint whipping cream
    butter
    salt
    pepper
    paprika

    Put oven to 350 degrees. Layer hash browns and then Swiss cheese. Pour whipping cream over the top. Dot with butter, sprinkle salt and pepper. Finish with sprinkling paprika and put in the oven for 45 minutes. Check at 30 to make sure edges aren’t too crispy and brown- if becoming so- add tinfoil for the last 15 minutes. You can switch out the hash browns for the southwest variety by Simply potato and add pepper jack instead of Swiss for a spicy version. This is a family fave!

    6 chicken breasts
    1 can black beans, rinsed and drained
    1 can enchilada sauce (you pick the intensity!)

    Throw these in a crockpot, or in the oven if you’re out of time. Cook until the chicken is done (6 hours on low in crockpot, 1 hour at 350 in the oven)

    Serve over brown rice, with sour cream, cilantro and corn chips!

    The next day, dice up the leftovers and make chicken buritoes!

    This one was a hit at the company Christmas party last year; our VP’s wife insisted I pass along the recipe:

    Cheesy Hash Brown Bake (serves 10)

    INGREDIENTS
    1 (30 ounce) package frozen shredded hash brown potatoes, thawed
    2 (10.75 ounce) cans condensed cream of potato soup, undiluted
    2 cups sour cream
    2 cups shredded Cheddar cheese, divided
    1 cup grated Parmesan cheese

    DIRECTIONS
    In a bowl, combine the potatoes, soup, sour cream, 1-3/4 cups of cheddar cheese and Parmesan cheese. Transfer to a greased 3-qt. baking dish. Sprinkle with remaining cheddar cheese. Bake, uncovered, at 350 degrees F for 40-45 minutes or until bubbly and cheese is melted. Let stand for 5 minutes before serving.

    And this time of year, you can’t go wrong with a good wassail (especially one the kids can enjoy, too):

    Lion House Wassail (serves 36)

    INGREDIENTS
    2 1/4 cups white sugar
    4 cups water
    2 cinnamon sticks
    1 slice fresh ginger root
    4 cups orange juice
    2 cups lemon juice
    8 cups apple juice
    8 whole allspice berries
    1 tablespoon whole cloves

    DIRECTIONS
    In a large saucepan, combine sugar and water. Boil for 5 minutes. Remove from heat, and add cinnamon sticks, allspice berries, cloves, and ginger. Cover and let stand in warm place for 1 hour.

    Strain liquid into a large pot. Just before serving, add juices and cider and quickly bring to boil. Remove from heat and serve.

    Easiest Chicken Dish Ever

    Brown chicken thighs on both sides in large frying pan or pot. Add Heinz chicken gravy, fresh mushrooms, and marinated artichoke hearts to pan. Cover and cook for 20 minutes or until chicken is done. Serve with rice and a vegetable.
    Quantities are based on number of people eating.

    Bruschetta-the best tasting bread you will ever eat. We learned to make this when we visited Tuscany.

    Ciabatta bread, fresh garlic, cold pressed olive oil, sea salt

    Slice bread and grill on either grill pan or grill until both sides are golden brown. Skin garlic clove and rub both sides of bread with garlic- it will begin to shread and absorb into the bread. Drizzle with olive oil and sprinkle with sea salt. Buon Apetite!

    MUSTARD DILL PICKLES

    This will prepare 6 pints.

    ½ cup sugar
    ½ cup dry mustard
    3 cups vinegar
    1 cup water
    ½ tbl crushed red pepper
    a little dill

    Mix all together cold and pour over spears of cucumber in jars. If a little more is needed, top with vinegar.

    Cap. Turn jars over every 4 days for a few weeks.

    1 1/2 lbs. chicken breasts
    1 jar salsa
    1 can corn
    1 can black beans

    Put it all in the slow cooker — high or low — until the chicken is done and falls apart. I shred the chicken and serve it with tortillas, but it could work as a soup or a dip. It’s good with sour cream and cheese, but what isn’t?
