I know. We will celebrate anything, won’t we?

Cookbook author Tessa Arias produced The Ultimate Guide to Chocolate Chip Cookies on her blog, Handle the Heat and, along with pan and oven recommendations, suggested the following tips:

  • For a cakey texture: Use baking powder (and remove baking soda).
  • For a soft-yet-crisp texture: Use equal amounts baking soda and baking powder.
  • For a crackled-top, brownie effect: Melt the butter.
  • For an intense butterscotch flavor: Use only brown sugar.
  • For chewy cookies with a good depth of flavor: Chill the dough for 24 hours.
